Today February 16th is PANCAKE DAY, I had a thousand things to do but I had to publish a new recipe right?
So I managed to cut out some time between the thousands of commitments and make some quick pancakes, after all it takes very little time, 10 minutes and they’re done.
Since I was a child I have always loved vanilla ice cream with hot berries, hot and cold is a contrast that taste great in desserts. So I decided to use this delicious combo on top of pancakes that also contain berries in the dough. Is there nothing more delicious than this????

INGREDIENTS:
- 45 g coconut sugar;
- 190 g vegetable milk;
- 25 g sunflower seeds oil;
- 170 g cake flour;
- 3 g baking powder;
- 1 tsp flax seeds (optional);
- 100 g berry.
TO SERVE:
- Vanilla vegan ice cream;
- 200 g berry;
- 2 tsp lemon juice;
- 2 tsp caster sugar.
METHOD:
1 – In a bowl weigh the coconut sugar, add milk and oil and mix with a whisk, add sifted flour and baking and mix. Finally add the flax seeds and berries.
2 – Heat a non-stick pan and melt a little vegan butter.
3 – With an ice cream scooper or a ladle pour a spoon of preparation into the pan. Cook a couple of minutes per side, it depends on the size.
4 – In a saucepan, heat the berries with the lemon juice and sugar, cook for a few minutes.
5 – Serve the pancakes with a scoop of ice cream and warm berries.
